CREAMY FETTUCCINI WITH CHICKEN & VEGGIES..!! ❣❣

An opened packet of cream, a few colored bell peppers, & some mushrooms were sitting in my fridge..waiting to be used. 

It had been quite a while since I’d made fettucine.. which is a family favorite..and now I had all the required ingredients..so dinner was sorted! 💖


Got some boneless chicken and a packet of the fettucine pasta.. & got to work! 😍👍🏻

I’ve made fettuccine quite a number of times earlier, but this time it turned out really delicious! 😋😋


I added some fresh basil leaves from my kitchen garden in the sauce this time, which gave such a beautiful burst of flavor to the dish, we loved it! ❣❣

Topped with some beautiful Parmesan cheese, this was pure bliss! 😍


Sharing with you all this super easy & delicious creamy fettuccine the way I made it this time..do give it a try! ❣
Ingredients: 

1 packet of fettuccine pasta 

2-3 boneless chicken breasts 

1 each Red, yellow & green bell pepper, thinly sliced

1 cup mushroom, sliced 

1 onion, thinly sliced

5-6 big cloves of garlic, finely chopped 

8-10 fresh basil leaves,cut in chiffonades ( sliced in thin ribbons )    

2 cups cooking cream

1 cup milk ( I used milk powder to make the milk ) 

1 cup pasta water 

Salt to taste 

2 tsps freshly ground black pepper

1 tsp garlic powder

2 tsps paprika

1 tbsp Italian seasoning

1 tbsp Mrs. Dash All purpose seasoning

1/2 tsp red chili flakes( optional)

4 tbsps butter

2 tbsps olive oil

1/4 cup Grated Parmesan cheese + some more for topping

Method:

Wash & pat dry the boneless chicken breast & cut in strips. Place in a bowl & add salt, half the quantity of pepper, garlic powder , paprika , Italian & all purpose seasoning , a drizzle of olive oil & rub the chicken strips to marinate well. Cover the bowl & keep aside for 15-20 minutes. 

Meanwhile slice all the veggies & keep ready. 

Boil the fettucine in a big pot of boiling water with enough salt. Once al dante drain the pasta in a bowl completely , toss in a bit of olive oil & keep aside. Do not throw the pasta water, since we will be using some of it in the cream sauce.


Now heat 2 tbsps butter & 1 tbsp olive oil in a pan & add half of the chopped garlic.


 Sauté in the butter till fragrant & add the marinated chicken strips. 


Cook the chicken till golden brown & tender . 


Remove the chicken strips in a dish and in the same pan add the remaining butter & olive oil. Once it bubbles add the rest of the chopped garlic and onions. 

Sauté for a bit till the onions are translucent and then tip in the sliced veggies & add the remaining spices & seasonings, and sauté for a few minutes till just cooked. 
Add the cooked chicken strips now and give it a good stir. 


Once the veggies & chicken are well mixed, add the cream & milk and give it a stir. Add some pasta water to get a nice & creamy sauce. 


Cook the sauce for a few minutes & simmer gently for a few minutes. Now add the grated Parmesan cheese and mix well. 

Throw in some of the sliced basil leaves & save some for garnish. 

You could also add some more Italian seasoning , pepper or even chili flakes if desired. 

Taste & adjust flavors. 

Once the sauce has simmered for a few minutes, add the boiled fettuccine. 


Mix gently till all the pasta is coated well with the sauce. 

Switch off the flame now and let the pasta sit in the sauce for a few minutes to absorb all the flavors. 


Garnish with some fresh basil leaves & serve nice & warm topped with some lovely grated Parmesan cheese!
